Varietals: Corvina 45%, Corvinone 40%, Rondinella 10%, Molinara 5%.
Alcoholic content: 14%.
Origin: Fumane – San Pietro in Cariano.
Yield: 120 Q.Li/Ha.
Farming system: Pergoletta.
Harvest: By hand.
Fermentation: 2 weeks maceration. On the skins in september; with Ripasso refermentation on Amarone skins with 10 days maceration.
Ageing: 12 months in 50 hl of Slavonian oak barrels.
Ageing in the bottle: 6 months.
